Garbanzo bean salad has all the fixings of hummus but with less work.

I’ve been in love with healthy hummus dishes for some time now and I’m so happy to share this beauty with you today.

I am calling this a deconstructed hummus salad, but you can just call it delicious.

This healthy hummus salad has all the fixings of traditional hummus, and it’s served on a bed of fresh greens.

What is this?

We love summer, no matter what season we are in. Here in the midwest, the summers can be short and the winters long and hard.

What’s in it

  • Garbanzo Beans
  • Cumin
  • Tahini Paste
  • Lemon
  • Lemon Zest
  • Garlic
  • Salt & Pepper
  • Fresh Greens

Making healthier and lighter food choices help us to remember warmer days of bright sunshine, even when there is nearly a foot of snow on the ground in mid-April.

This is our reality in northeast Wisconsin, but it’s not all bad.

Hummus is one of those foods that makes us feel good about what we are eating,  no matter what the weather is doing outside.
Loaded with nutrients like fiber and protein, it is much better for you than a hearty cheese spread or a spoonful of mayonnaise on your lunchtime sandwich.
In case you’ve never tried it like that, hummus is a great substitute for both those things.

Try this healthy hummus dish today

On this sunny Saturday at our small cottage on a small lake in the middle of Nowhere, Wisconsin, I decided to try a different type of hummus.
One that is not mashed and blended.
Friends, this is one recipe you have to try.

This garbanzo bean salad is delicious, attractive, and it is loaded with health.  Eating this healthy hummus creation will make you feel the same way.

There is one more factor that deconstructed hummus salad a winner; it is extremely easy to throw together.

It has all the taste of a wonderful hummus and none of the mess.  There is no food processor, chopper, blender, or what have you.  It is virtually a one-bowl wonder.

I love hummus, and I prefer to make my own, all the fuss and muss involved sometimes prevents me from taking the time to make it.

This garbanzo bean salad is a deconstructed hummus salad with all the tastes and benefits of healthy hummus but much less work to make. Give this one a try today and you'll feel as good as this beautiful salad looks.

Cook: 10 minutes
Total: 20 minutes
Yield: 4

Ingredients 

  • 15 oz garbanzo beans, 1 can, low sodium
  • 1 tbsp ground cumin
  • 1 pinch kosher salt
  • black pepper, fresh ground, to taste
  • 1 clove garlic, crushed
  • 1 tbsp tahini paste
  • 1/2 lemon, juiced
  • 1 tbsp lemon zest, fresh
  • fresh mixed greens to garnish, optional

Instructions 

  • Rinse garbanzo beans well, and remove the skins if desired. Place beans in medium-size mixing bowl.
  • Gently fold in remaining ingredients and mix until thoroughly blended
  • Serve with lemon wedges and mixed greens.

    We really enjoy making our own hummus at home and like you mentioned, it is a bit of a mess. This idea for a deconstructed hummus salad is genius. Can’t wait tot try it!
