About this

Part salad, part brunch, this chilled cantaloupe soup is all health and flavor. Dressy enough to be an elegant soup or appetizer it’s also versatile enough to be enjoyed at home, for no special occasion other than treating yourself to an out of the ordinary dish.

We don’t make soups often enough here on Platter Talk but we’ve had a couple of beauties and this chilled cantaloupe soup can run with the best of them.

Last summer we introduced our chilled blueberry soup and tomato, strawberry and basil gazpacho. With this recipe, it seemed only fitting to introduce another gorgeous summer soup to the mix.

This chilled cantaloupe soup takes just minutes to blend together. A couple of lime wedges, a splash of orange juice, and of course a cantaloupe, and you’re good to go with a new taste sensation that’s as easy on the eyes as it is on the palate.  Long live summer! Chilled Cantaloupe Soup

This chilled summer soup recipe adapted from Real Simple.
Prep: 10 minutes
Total: 10 minutes
Yield: 4 servings

Ingredients 

  • 1 large chilled cantaloupe seeded and cut into 1-inch chunks
  • 1/2 cup orange juice
  • 1 lime, quartered
  • zest of 1 lime

Instructions 

  • Place the cantaloupe in a blender, add the orange juice, and puree until well blended.
  • Divide the soup evenly among 4 bowls.
  • Squeeze the limes over the soup
  • Garnish with lime zest.
  • Serve chilled.

Notes

Add a dash of cinnamon for a little extra flavor!
