Banana Chocolate Chip Muffins from Platter Talk
This past weekend, I was checking our freezer to see what we could use up for some meals at our cottage in the middle of Nowhere, Wisconsin. As I was rummaging around, I discovered a bag of frozen bananas. This is something that I have the tendency of doing. When my bananas get a little overripe on the counter, I peel them and throw them in a freezer bag and use them when the urge for banana bread hits me. Well, with the discovery of this little treasure, I saw the opportunity for a loaf of delicious banana bread. However, I wanted to try something different this time. I turned them into Banana Chocolate Chip Muffins from Platter Talk instead.
These muffins couldn’t be any easier. With almost no changes, our banana bread recipe converts to muffins with ease. Instead of using a bread pan, I took out our muffin pan instead. This recipe makes 12 perfect muffins. With the addition of a sprinkle of raw sugar to the top of the muffins before they are baked, a wonderful crust and crunch to the muffin is achieved.
So next time you are need of a banana pick me up, give these muffins a try. They are kid tested, father approved in our house!

Banana Chocolate Chip Muffins from Platter Talk
Ingredients
- 3 or 4 ripe bananas smashed
- ⅓ cup melted butter
- 1 cup sugar can easily reduce to ¾ cup
- 1 egg beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 ½ cups of all-purpose flour
- ½ cup chopped walnuts optional
- ½ cup semi-sweet chocolate chips optional
- raw sugar for sprinkling on top of muffins
Instructions
- Preheat the oven to 350°F .
- Grease a muffin pan and set aside.
- Using a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
- Mix in the sugar, egg, and vanilla.
- Sprinkle the baking soda and salt over the mixture and stir.
- Add optional walnuts and chocolate chips, if desired.
- Add the flour and then mix by hand.
- Spoon batter equally into muffin pan.
- Sprinkle a little raw sugar to the top of the muffins.
- Bake for approximately 20-24 minutes. Check to see if muffins are done by inserting a knife in the center of the muffin. If the knife comes out clean, muffins are done.

Dan, this is such a great recipe! Firstly, I’m totally there with your kids fighting for the biggest slice…I certainly don’t blame them! Your bread looks so moist, and with the pops of chocolate in there…who can resist?? Very smart idea making them into cups – I think it’s also a wonderful way to not overindulge in dessert you know? Because that can get dangerous with something as yummy as this! Everyone gets equal portions, and it also feels like you get a whole muffin to eat (so no feeling jipped) vs. sometimes just getting a thin slice of the banana bread and feeling like heyy, i want more! :p And I’m totally with you on the freezing bananas…I do it ALL the time because bananas just brown so incredibly fast! These are the perfect “kitchen sink” (so to speak) creation for the cottage 🙂
