Banana Crumb Cake

I have to make a confession. I buy bananas to sit on my counter. Not for them to spoil or to get rotten. The reason I do it so that the bananas will over-ripen and I can make banana bread. Don’t judge me. I love me some banana bread but what about banana cake?  When I was looking at the bananas this morning, I wanted to do something different and that my friends is how this banana crumb cake came to be. As a bonus, it’s one of the more easy cakes to bake at home!

Bananas are good for more than just banana bread! Although we’ve made that a time or two as well. This banana crumb cake is a welcome change and you will fine it to be one of the more easy cakes to bake at home.

As I started to assemble this very easy banana cake, every child emerged from different rooms in the house.  The common question amongs them all was only but two excited words, “Banana bread”? When I replied no, the smiles quickly ran from their faces. However, when I told them that I was making banana crumb cake, those smile reemerged and a new question was then asked, “Is it ready yet?”

The house filled with the heavenly aroma of banana cake. I stood at the oven trying to will the cake to cook faster so that I could have a slice. Then I remembered the old adage that my mom instilled in me as a child, “Good things come to those who wait.”  Thus, I patiently waited and continued to enjoy the warm and heavenly wafts coming out of the oven.

When the banana cake finally cooled, we sat at the kitchen counter as a family and had a slice of this banana crumb cake. Not only was my mom right on target with her advice, this is one of the easy cakes to bake, based on my time as a kitchen dad.

We discussed world events with the boys, which really only means things like school, skateboarding, snowman building, and important things like that. Oh, and this banana cake.

Their world is pretty small right now, and I will take that for as long as I can. I couldn’t think of a better way to share a cold winter’s afternoon than by having a piece of this banana cake and spending time with the kids. Banana Crumb Cake

Ingredients 

for the cake

  • 2 cups sugar
  • 1 cup milk
  • 1 cup pecans, chopped
  • 2 cups flour, self-rising
  • 1/2 cup butter, unsalted and softened
  • 2 eggs
  • 4 bananas
  • 1 tsp vanilla extract

for the crumb topping

  • 1/2 cup butter, unsalted and softened
  • 1 cup brown sugar, dark or light
  • 1 cup flour, all-purpose
  • 1/2 cup pecans, chopped
  • 1 tsp cinnamon

Instructions 

  • Preheat oven to 350 degrees
  • Grease a 9X9 cake pan (cut a piece of parchment and line the bottom of the pan, if you desire)
  • In a bowl cream the butter and sugar together, using a mixer. Add the bananas and continue to mix until the mixture becomes more liquid. Then, add the remaining ingredients for the cake and mix until incorporated. Set mixture aside

To assmemble the crumb topping

  • In a bowl put the the soften butter, brown sugar, flour, pecans and cinnamon. Using the back of a fork, push the fork down on top of the ingredients to combine.Continue until the mixture forms into sandy consistency.
  • Pour 1/2 of cake batter into the pan. Sprinkle 1/2 of crumble mixture on top. Add the remaining batter to the pan, and then the remaining crumble.
  • Bake for 50-60 minutes, until tooth pick from center of cake is clean.

  1. Does this work as well if you don’t use self-rising flour? Or is there a way to adapt the recipe to accommodate regular flour?

  2. I made this today it is definitely a 9×13 cake not 9×9 it’s still baking and it smells wonderful

    1. I went 9×9 and regrettably. Messy oven but I did put a spill pan down. Wish I’d read your comment earlier. Here’s to hoping it still turns out well.
