How to Make Crock Pot Chicken and Biscuits

Prep time is a breeze with this easiest recipe. Start by preheating your slow cooker on it’s high setting. Add a cup of warm water.

  1. Start with your chicken and place it in your crock pot.
  2. Add a diced onion and you can add an optional bay leaf if you like.
  3. Add a can of cream of mushroom soup.
  4. Season well with fresh ground black pepper and a teaspoon or so of salt. Now reduce the heat setting to medium or low, depending on your slow cooker. Allow the chicken to cook like this for 6 to 8 hours, with the cover on.

Once the chicken is cooked, remove it from the slow cooker and allow it to cool on a plate. You can easily take it out of the Crock pot it by using a couple of big spatulas or wooden spoons.

Add the frozen peas and corn to the slow cooker and mix it with the soup mixture.

When the chicken has cooled enough to handle, shred it with a fork and place it back in the other ingredients, and let your slow cooker do its magic, transforming these simple ingredients into an easy crockpot chicken feast.

How to Make the Biscuits

You can easily use some store-bought or canned biscuits for this slow cooker chicken and biscuits recipe. Or, we prefer to make our own with this easy recipe for homemade biscuits.

Start by preheating your oven to 450° or as directed on the canned or packaged biscuit mix (if you’re not making your own.)

  1. Using a large mixing bowl, combine the flour with other dry ingredients and mix it all together. Add the shortening and stir with a fork until you have a pebbly texture.
  2. Then, in a smaller bowl, combine an egg.
  3. Along with some milk. And stir until they are well combined.
  4. Add the egg and milk mixture to the dry ingredients and mix thoroughly.

Drop tablespoon-size portions of biscuit dough on a greased baking sheet and
bake 12-15 minutes or until golden brown.

Another way to bake the biscuits is to place them on top of the chicken mixture, in the slow cooker. We use this method in our Hungarian goulash and seemed dumplings recipe.

Scoop those warm biscuits right on top of the chicken mixture and let them soak up that creamy goodness.

Ingredients 

for the chicken

  • 1 whole chicken
  • 1 can cream of mushroom soup
  • 1 medium onion, coarsely sliced and diced
  • 2 cups frozen corn
  • 2 cups frozen peas

for the biscuits

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1/2 cup vegetable shortening
  • 1 egg
  • 2/3 cup milk

Instructions 

for the chicken

  • Preheat the slow cooker to a high setting and add a cup of warm water.
  • Place chicken in slow cooker. Add the cream of mushroom soup, diced onion, and salt and pepper.
  • Reduce the temperature setting to medium or low, depending on your slow cooker, and allow it to cook, covered, for 6 to 8 hours.
  • Remove cooked chicken from slow cooker and allow to cool on platter.
  • Add corn and peas to slow cooker and cover.
  • Remove meat from bones and place the meat back in slow cooker and stir with fork to incorporate meat with the peas and corn.
  • Keep warm and covered until ready to serve.

  • Preheat oven to 450 degrees F.
  • In large mixing bowl, combine dry ingredients
  • Add shortening and work in with flour mixture using fork to achieve pebbly texture
  • In separate bowl combine egg and milk, beat until thoroughly combined.
  • Add liquid to to flour mixture, stirring until completely mixed.
  • Drop tablespoon-size portions on greased baking sheet
  • Bake 12-15 minutes or until golden brown.

Notes

Additional Recipe Tips
  1. For a thicker sauce, mix in a tablespoon of flour or cornstarch during the last hour of cooking.
  2. Add a sprinkle of cheese on top of the biscuits before baking for a savory, cheesy twist.
