Cry today and smile for days to come – that is when you need to add some onion to that broth, those beans, or even that salad. Up until recently we always seemed to end up wasting a good portion of onion that may have been in excess of what a particular recipe called for. No more. We have gotten into the habit of dicing the remaining onion, placing it in a small zip-lock freezer bag and keeping it in the freezer (make sure you remove as much air as possible.) This method does an excellent job of preserving the onion to a near state of freshness. It’s a great feeling to reach into your freezer, take out a handful of the frozen onion, and toss into whatever it is you are making for the extra flavor. Talk about no fuss and no muss, but best of all – no tears!
