Remember the homemade 5 Minute “Small Batch” Quinoa Flour I posted last week? Well this is the story behind it and the recipe I used it for.
Moving! Ah! What an experience moving can be. After living in the same house for 18 years The Hubby and I decided to make a life-change. Sell the house and move to a more rural area. Big decision, but absolutely the right one for us. Surprisingly, we have enjoyed the process immensely. We’re almost settled in after a couple of weeks and it feels really good.
Stepping outside your comfort zone can be a scary but exhilarating experience. The rewards are unfathomable when you follow through. That’s what we do, we follow through.
I believe that challenging yourself on a regular basis is frightening but rewarding. Trying a new adventure keeps your brain young. It doesn’t matter if it’s a big or small self imposed “bump in the road”. It all counts toward keeping those brain cells active.
My “New” Challenge Choppertunities:

The Hubby and I often exclaim that “It’s the little things” that make life so satisfying. And that takes me to the point of this recipe. My new food ingredient to play with is an absolute little delight. This one ingredient change can make other ingredients that I use often taste incredibly new and refreshing. Yes, it is “The little things”.
Right in the middle of our move I took on the challenge of creating a Chopped recipe with a “new to me” meat. Veal. Yes, I’ve had veal in restaurants, but have never cooked it myself.
Why? I was unsure of the whole process of “farm to table” concerning veal. When I came across Mountain States Rosen Veal competition and read their family history of raising this deliciously versatile protein, I knew I had the right environment to “give it a go”. Good quality veal starts with animals that are well taken care of. These animals are fed a top quality, nutritious diet. The farmers provide health maintenance and safe housing to reduce stress.
Cedar Springs Veal cutlets are a delicate but versatile cut of meat. No wonder that French, Italian and Cosmopolitan chefs have embraced this tasty, lean meat. The cutlets are thinly “Chopped” and they cook up quickly which fits perfectly into The Chopped Diet “template”. The “real veal” beauty of this meat is that it is a blank canvas for creating “in depth” flavor profiles with herbs and spices. It’s so fun to work with.
You know me, the Chopped ingredients I use are delicious AND healthful. I found that a 3 oz. serving of humanely raised veal cutlet has a whopping 31 grams of high quality protein, and less than 3 grams of fat. Which again fits the profile of a Chopped. Veal can be roasted, grilled, or like I did, quinoa crusted and sautéed! These cutlets were in the pan and out in less than 3 minutes! Can’t beat that for a “time chopper”.
I wanted all the Chopped ingredients to compliment the Crusted Veal Cutlets, not overwhelm their delicate flavor. By sautéing them in the quinoa flour they take on a nutty flavor and crunchy texture. They are the star of this Chopped!
The dressing has all the flavors that bring out the delicious taste of veal. You may be tempted to make enough of these cutlets for an entree portion one night and use them for a Chopped the next. This is totally understandable. They are a succulent “focal point” to any meal.
Veal is soon to become a staple in your house just as it is in mine…Now!
