What is this?

We like to “spice” it up a bit with our food from previous meals and try and be creative.

Don’t get me wrong, sometimes I just reheat what we had the night before for the family.

But this week I had a craving for Mexican food.  So we had a fiesta in our kitchen and created these great pork tacos.

Quick, easy and delicious.  Just how we like it.

Who Can Resist a Good Deal at the Grocery Store?

You all should know me by now.  When I go into a grocery store, I buy what is on sale and I figure out what to do with it later.

More times than not, this works to our favor.  This past week I spotted a beautiful pork tenderloin on sale and so I decided this was too good of a deal to pass up.

I probably didn’t need to get a six-pound piece of meat, but it was a fantastic deal.

Now, I know that you may be saying, freeze what you don’t use Scott and save it for another time.

This is great advice and therefore something that I  typically do.

This time, however, all I wanted to do was to get that tenderloin on the grill, and that is what I did.

The meat was juicy and tender and therefore everyone enjoyed it the first day.

The second day we made a wrap out of it and thus got the same great reviews as well.

But when I mentioned that we had to finish it up soon, no one was excited until I said the magic word, tacos. Or, Tacos de cerdo sobrantes (Leftover Pork Tacos.)

Simple is usually best, in the kitchen as well.

We kept everything basic for these Tacos de cerdo sobrantes  (Leftover Pork Tacos) thus making them even better.  I simply pulled out what I had in the fridge and pantry.  Dan had made his world-famous guacamole a day or so before.

His guacamole was definitely going into my taco and luckily we had cilantro as well.

The chopped cilantro leaves elevate these tacos de cerdo sobrantes  (leftover pork tacos) and thus imparts a fresh and lively taste.

Because I did not have sour cream on hand, I substituted plain Greek yogurt and mixed in a little taco seasoning.

It seems the flavor that I needed was no effort at all and therefore in a matter of a few minutes everything was chopped and ready. Soon, everyone began to assemble together and our taco bar was created.

After the first bite, no one even remembered that they were eating leftovers.

Tacos de cerdo sobrantes (Leftover Pork Tacos)

This leftover pork roast recipe or tenderloin makes for a great second act on your lunch or dinner table. Make these leftover pork tacos today!

Yield: 6 People

Ingredients 

  • 2 Lbs leftover pork tenderloin, could easily substitute leftover chicken
  • 1/2 small chopped red onion
  • 2 medium chopped tomato
  • guacamole
  • chopped cilantro
  • jar salsa of your choice
  • 1/2 cup plain greek yogurt
  • 1 tsp or to taste taco seasoning
  • 2-3 limes
  • Package of flour tortillas
  • Bottle of your favorite Sangria

Instructions 

  • Mix the greek yogurt and taco seasoning together and set aside
  • Chop the tomatoes, onions and cilantro and set each aside in bowls separately
  • Cube your pork into 1/2 cubes
  • Place pork in a microwave bowl adding about a teaspoon of water.
  • Cover bowl with saran wrap and microwave for about 2 minutes on 70 % power. You just want to warm the meat not cook it. The water and saran wrap will keep it from drying out.
  • Assemble your taco in your tortilla using any of the ingredients listed above
  • Pour and glass of Sangria and finally enjoy your meal.

    Love the repurposing of leftovers to something so different it seems new. I also have come to like yogurt better than sour cream for this kind of thing—it’s cleaner tasting and zippier.
    There’s no way you bought a 6-pound pork tenderloin though. Maybe a pork loin, which is a different cut of meat.
