Combine the eggs, sugar, salt, and vanilla into a large mixing bowl.
Add scalded milk after it has cooled to room temperature.
Whisk it all together.
Apply an egg wash to the inside of the pie crust.
Pour the egg custard filling into the pie shell.
Evenly sprinkle the nutmeg on top.
Bake at 400° until the edges are set and center is slightly jiggly.
