Preheat oven to 350° F. and In an oven safe skillet, over medium heat, add olive oil and brown pork chops on each side, about 2 minutes each side. Reminder: Don't forget to season the pork chops with salt and pepper first. Remove pork chops from pan.
Add 2 tablespoons of butter, onions, mushrooms and carrots. Cook until onions begin to become translucent or soften. This will only take 2-3 minutes.
Add remaining butter and flour. Stir flour into the vegetables and allow to cook for a minute or two.
Pour in the white wine and allow the alcohol to cook off. This should take a minute or so. You may wish to increase the temperature of your burner to allow the gravy to come to a light boil.
Add the remaining wet ingredients, chicken stock, apple cider, apple cider vinegar as well as your seasonings, poultry seasoning, ground sage, ground cloves and salt and pepper to taste. Bring to a simmer and add back the pork chops to the gravy. Cover your skillet and place in the oven for approximately 30 minutes to allow your pork chops to finishing cooking.
