Chocolate Blueberry Bread Pudding

for the bread pudding

  • 1 loaf French Bread coarsely torn
  • 3 large eggs
  • 1 1/5 cups granulated sugar
  • 3 cups skim milk
  • 2 cups white chocolate chips
  • 2 cups blueberries
  • 1 tablespoon pure vanilla extract
  • a sprinkle of ground cinnamon

for the sauce

  • 1 cup semi-sweet chocolate chips
  • 1/4 cup skim milk


for the bread pudding

  • Preheat oven to 350 degrees F.
  • Apply non-stick coating to 9 x 13" baking dish (or slightly smaller.)
  • Using large mixing bowl, whisk eggs, milk, sugar and vanilla together.
  • Add bread and gently stir. Allow to sit 15 minutes, fold bread into mixture every couple of minutes to facilitate absorption of liquid.
  • Use soft rubber spatula to fold in berries and white chocolate chips.
  • Transfer mixture to prepared baking dish and evenly distribute.
  • Sprinkle with ground cinnamon.
  • Bake uncovered for 50 minutes.

for the sauce

  • Heat milk in small skillet over low heat.
  • Add semi-sweet chocolate chips, stir until melted. Adjust volume of milk and chocolate to attain desired consistency.

  • Serve warm, drizzle sauce over bread pudding.
