Preheat oven to 375° F. Using a large mixing bowl, combine sugars, butter, vanilla and egg. Fold in flour, baking soda and salt. If using a stand mixer, mix on low setting.
Using ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
Bake for 10 to 12 minutes or until light brown (centers will be soft). Allow to cool slightly and place on wire rack.
Notes
Place cookie dough on a cookie sheet that is lined with parchment paper for fast and easy transfer to the wire rack when the cookies come out of the oven.To make these cookies into a chocolate chip cookie pie, simply place dough in a large cast-iron skillet. Bake at 375° for 25-30 minutes or until golden brown and firm in the center.
