Ingredients

lb
2 kg ground chicken
1/4
cup
grated Parmesan cheese
plus more for garnish
1/3
cup
breadcrumbs
1
tablespoon
Worcestershire sauce
2
garlic cloves
peeled and crushed
1
teaspoon
kosher salt
1
teaspoon
anchovy paste
optional
1
tablespoon
olive oil
1
tablespoon
Dijon mustard
zest from 1 lemon
juice from 1/2 lemon
fresh ground pepper to taste
Instructions
If using wooden skewers, soak in water.
Oil grill grates and heat grill to medium-high setting.
Using large mixing bowl, combine all ingredients and mix thoroughly.
Form mixture into golf ball size rounds and skewer, 3 to 4 to a stick.
Place kebabs on grill and allow them to cook about 3 minutes per side, use medal spatula to turn.
Serve atop hearts of romaine, garnish with additional Caesar dressing and Parmesan cheese if desired.
Notes
Hint: Rinse your hands with a little water, in between skewers. This helps form smoother piece of kebab and makes them more uniform in shape and size.
