Caesars Salad Chicken Kebabs

Ingredients
- 1 lb 2 kg ground chicken
- 1/4 cup grated Parmesan cheese plus more for garnish
- 1/3 cup breadcrumbs
- 1 tablespoon Worcestershire sauce
- 2 garlic cloves peeled and crushed
- 1 teaspoon kosher salt
- 1 teaspoon anchovy paste optional
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard
- zest from 1 lemon
- juice from 1/2 lemon
- fresh ground pepper to taste
Instructions
- If using wooden skewers, soak in water.
- Oil grill grates and heat grill to medium-high setting.
- Using large mixing bowl, combine all ingredients and mix thoroughly.
- Form mixture into golf ball size rounds and skewer, 3 to 4 to a stick.
- Place kebabs on grill and allow them to cook about 3 minutes per side, use medal spatula to turn.
- Serve atop hearts of romaine, garnish with additional Caesar dressing and Parmesan cheese if desired.
Notes
- Lightly oil the grill grate to keep the chicken skewers from sticking.
- Use an instant-read thermometer and cook chicken to 165°F for juicy, tender kebabs.
- Leave a little space between each ball of chicken on the skewers for even cooking.
- Let the cooked skewers rest for 5 minutes before serving to keep the juices inside.
- Form the skewers ahead of time and chill them in the fridge if you want to prep early.
