Low-Carb Cauliflower Soup with Roasted Garlic

This low-Carb Cauliflower Soup with Roasted Garlic is a healthy and comforting soup loaded with rich flavors!


Preheat oven to 425F.  Roast the cauliflower florets and garlic on a baking sheet.

Let's Make This! 

In a large pot, saute the carrots, onion, and celery in some olive oil until the vegetables are soft, but not mushy. 

Next, add in the cauliflower florets and the broth.  Squeeze the roasted garlic in the pot and toss in the fresh thyme. 

Bring to a boil then reduce to simmer. Use an immersion blender to puree and then add the cheese, half and half, and rest of the seasonings. 

Let it simmer for a few minutes and then serve and enjoy!
