Leftover Steak Enchiladas

Use leftover steak or ground beef to make these beef enchiladas for a fun and delicious family meal!

Ingredients

Preheat oven to 350F. Combine the leftover steak, corn, onion, black beans, and chili peppers in a large mixing bowl. 

Add in your favorite salsa. 

Fold in the shredded cheese. Add a can of red enchilada sauce.

Scoop out the mixture and spread down the centre of the tortillas.

Then place the enchiladas in a baking dish. Top with remaining enchilada sauce and shredded cheese.  Bake for 30 minutes and serve with sour cream and salsa.
