In our family of six growing kids, very few foods rule the roost any greater than chicken. Of course there’s pizza, mac ‘n cheese,  burgers, and the such, but if there was one food in particular that our guys all love, their go-to food at both restaurants and at home, it is (universally) chicken. And cheese. And ranch dressing. To that end, we found the perfect combination, with this recipe for Crispy Ranch Chicken Breasts.

These Crispy Ranch Chicken Breasts have it all. They go together fast, they’re very affordable, nutritious, and perhaps most of all, amazingly delicious.

To Make These Cripsy Ranch Chicken Breasts

(Full recipe at end of post)

  • Place chicken breasts in baking pan
  • Combine shredded cheese, mayo and (dry) ranch dressing mix
  • Add some lemon juice and a dab of Dijon mustard to the mix and stir it all thoroughly.
  • Evenly spread the mixture over the chicken, sprinkle Panko (coarse) breadcrumbs over mixture.
  • Spray breadcrumbs with oil (or non-stick cooking spray)
  • Bake at 425° for about 30 minutes.

When I put this recipe for Crispy Ranch Chicken Breasts together, it was my intention to serve it primarily as a kid’s meal. Don’t get me wrong, the kids all loved it. Here’s where the surprise comes in: The adults loved it as well. In fact, this dish presents so nicely and has so much flavor going on, I would not hesitate to serve it as an elegant entrée, suitable for both guests and family alike. It’s that good. Crispy Ranch Chicken Breasts

Ingredients

  • 3-4 boneless skinless chicken breasts, butterflied.
  • 1 cup shredded cheddar cheese
  • 1 cup low-fat mayonnaise
  • 1 envelope Hidden Valley® Original Ranch® Dip Mix
  • 1 tablespoon Dijon mustard
  • juice from 1/2 fresh lemon
  • 1/2 cup Panko coarse breadcrumbs
  • non-stick cooking spray or oil

Instructions

  1. Preheat oven to 425° F.
  2. Spray 9"x11" casserole dish with non-stick cooking spray.
  3. Place chicken breasts in dish, in single layer.
  4. Using small mixing bowl, combine shredded cheese, mayonnaise, ranch mix, mustard, and lemon juice. Stir thoroughly then spread evenly over chicken breasts.
  5. Evenly sprinkle breadcrumbs over chicken.
  6. Spray with non-stick coating or oil (via mister).
  7. Place in oven and bake for 30 minutes or until done.
  8. Garnish with additional shredded cheese if desired.

    This recipe is amazing. The chicken was cooked so perfect and very moist and juicy. A feat for breasts which can easily dry out. I only had regular mayo so I substituted for low fat Miracle Whip. Heavenly. Next time I will try it with low fat mayo. I served it with mashed potatoes and mixed veggies, and there was enough sauce for everything! This is a definite new favorite!
