This chilled cantaloupe soup takes just minutes to blend together. A couple of lime wedges, a splash of orange juice, and of course a cantaloupe, and you’re good to go with a new taste sensation that’s as easy on the eyes as it is on the palate. Long live summer! You’re sure to enjoy this one. -Dan
- 1 large chilled cantaloupe seeded and cut into 1-inch chunks
- ½ cup orange juice
- 1 lime, quartered
- zest of 1 lime
- Place the cantaloupe in a blender, add the orange juice, and puree until well blended.
- Divide the soup evenly among 4 bowls.
- Squeeze the limes over the soup
- Garnish with lime zest.
- Serve chilled.
