About this
The only time I have ever had this appetizer was at a local restaurant specializing in Mediterranean food, here in the Fox River valley of Wisconsin. It is no coincidence that this fine dining establishment offers black olive tapenade, as it is a popular food in the south of France where it is generally eaten as an hors d’oeuvere, spread on bread.
It is also used occasionally to stuff poultry, when served as a main course. This rich, olive based spread can be used as an appetizer, served with crackers, crusty bread or crudités. It can also be used as a condiment. For something a little different than the oft cream based and cranberry laden holiday accompaniment, give this rich and flavorful spread a try.

Easy olive tapenade recipe

Ingredients
- 1 cup kalamata olives, whole and pitted
- 1 garlic clove
- 1 anchovy fillet, or 1 teaspoon anchovy paste
- 1 tablespoon capers, rinsed and drained
- 1 tablespoon lemon juice
- 1 leaf fresh basil
- 3 tablespoon olive oil
Instructions
- Combine all ingredients in small food processor, or blender.
- Pulse/Process/Blend to desired consistency.
- Adjust ingredient quantities to taste.

I love Tapenade and have never thought to actually make it (what can I say, Trader Joe’s calls to me!)- maybe this will be the recipe that gets me off of the jarred variety!
