Puffed Chocolate Raspberry Wontons

It’s that time of year again when our kids are going through their list of Valentines and with our crew of six strapping young men, it comes as no surprise that their lists are not getting any shorter. Along with those lists of pink hearts and red cupid arrows, comes an exhaustive array of favorite foods and treats to celebrate the occasion. We borrowed an idea from ourselves that was immensely popular as a holiday treat a year or so ago and made a few modifications. The results were mouthwatering, in a new way. Custom made for a special treat and replete of colors, textures, and flavors of all things love, we are calling this new creation Puffed Chocolate Raspberry Wontons.
Did you happen to catch the Holiday Wonton Kisses that we put together a couple of holiday seasons ago? They were a big hit around the holidays which was not all that surprising considering their make-up of Hershey Kisses baked in a wonton made of pie crust and then sprinkled with sugar. This past December we were even asked to bring them to a local morning show where we put them together on live television. What was a surprise to me was their resurrection a month or so later at Valentine’s Day.
We thought we could do something a little less Christmassey and a little more appropriate for Valentine’s Day. We kept the design of these wontons the same but changed some of the key ingredients. Instead of pie crust, we used some store-bought puff pastry. In lieu of Hershey Kisses we melted some dark (60% Cacao ) bittersweet chocolate. And raspberries. Fresh raspberries.
It was love at first bite, lest you judge me for sounding trite, there is no other way to describe the experience of warm chocolate and raspberry encased in a bite size piece of soft and buttery puff pastry. There is also no way to describe the realization of having a new winning creation, which my instincts told me was a good possibility only to be confirmed by my palate the moment these came out of the oven. They proved equally wonderful the next day, enhanced by a five second stent in the microwave. Give this one a try and make them for someone you love. Make them for yourself. Puffed Chocolate Raspberry Wontons
Ingredients
- 1 box frozen puff pastry, thawed.
- 1 cup fresh raspberries
- 1 cup chocolate chips
Instructions
- Thaw puff pastry according to package directions.
- Preheat oven to 400 degrees F.
- In double boiler, melt chocolate chips.
- On lightly flowered surface, roll out puff pastry sheet to approximately 9 x 12 rectangle.
- Using coffee mug, cut out rounds of pastry.
- Use small spoon or pastry brush and place small amount of melted chocolate in center of each disc.
- Place raspberry in center of chocolate and pinch opposing sides of each disc together, forming a wonton.
- Place on greased baking sheet or stone and bake for 15 - 20 minutes or until golden brown.
Notes
It is very important to pinch tops of wontons together very firmly to ensure they don't open up during the baking process.
