Instant Pot Asian Beef over Lentils

If you are a fan of the popular Instant Pot then we have an Instant Pot Beef Stew recipe that you’re going to love. Like many other things made in the Instant Pot, this lively dinner is healthy and comes with lentils that are flavored with the same aromatics as the beef.
What is this?
We’ve been bitten by the Instant Pot bug here on Platter Talk, thanks to Santa and his elves. In all seriousness, there are few gifts that I have enjoyed or played with more than my new Instant Pot. I have the LUX 6 quart Instant Pot and although it is their base model, it still does wonders in the kitchen and using no other pot or pans I was able to make this Instant Pot Beef Stew in about an hour.
This Instant Pot beef stew starts with a healthy helping of dried lentils. “Dried lentils?”, you’re probably asking. “How can they be ready in an hour?” They are actually ready in about 20 minutes and it’s all thanks to my new Instant Pot
If you think you don’t like lentils, please give this recipe a try and you may find it life changing in that regard. While the lentils spend their brief stint in the Instant Pot, they are joined by a savory and lively trio of fresh ginger, garlic, and green onions, all of which were sautéed beforehand in, you guessed it, the Instant Pot. This same trio joins the recipe later on in this Instant Pot beef stew.
The final ingredient and star of this Instant Pot beef stew is a chunk of beef that is cut up into cubes and cooked in just minutes. First though, the beef is marinated in a brown sugar-infused soy sauce marinade. Part of the inspiration for this recipe comes from our very popular jerked beef recipe.
