My family loves all Mexican food. So whenever I can, I try to indulge them with some of their favorite things to eat. I also try to keep it as easy as possible for me. That is why I enlisted our crock pot to help me out with our Slow Cooker Chicken Fajitas Recipe.
Slow Cooker Chicken Fajitas Recipe
During the week it gets pretty hectic around our house. Between getting breakfast for everyone in the family, making lunches, shuttling children to school, and putting in a full day at work, it is hard to plan ahead for dinner. By the time the kids get home, they want to eat, and I don’t blame them. Thus, it is always helpful to have something prepared ahead of time.
Last week I used one of my favorite appliances, the crock pot so that dinner would be waiting for us when we got home. With only a few simple ingredients, I was able to put together something that the kids and adults went wild over, this Slow Cooker Chicken Fajitas Recipe.
The great thing about this recipe is that I actually had all of the ingredients in my house. It only took me a few minutes to assemble everything in the crock pot and get out the door. I went very basic, but you could customize and add anything that your family loves.

Slow Cooker Chicken Fajitas Recipe
Ingredients
- 2 lbs boneless skinless chicken breast
- 1 medium onion cut into strands
- 3 orange or red peppers
- 1 packet of taco seasoning
- 3/4 cup of water
- corn or flour tortillas
- sour cream
- salsa
- diced tomatoes
- lettuce
Instructions
- Place chicken in crock pot
- Sprinkle taco seasoning on both sides of the chicken, reserving 1/4 of the seasoning.
- Place onions and peppers on top of the chicken and sprinkle the remaining seasoning on top.
- Add water.
- Place lid on the crock pot.
- Cook on low for 4-6 hours or until the chicken is completely cooked.
- Take chicken out of the crock pot and shred.
- Remove the onions and peppers.
- Return the chicken to the crock pot so that it can absorb the liquid in the pot.
- Assemble the fajita with the chicken and onions and peppers.
- Top with favorite toppings (tomatoes, sour cream, etc.)
- Enjoy!
