The BEST Turmeric Chicken Salad

This easy turmeric chicken salad recipe is served over a bed of greens. Fortified with healthy ingredients like avocado, olive oil, and apple cider vinegar, you'll fall in love with this large bowl of health and flavor!

Ingredients 

  • 1 cup baby spinach leaves
  • 1 cup fresh greens
  • 4 oz chicken breast, cooked
  • 1 tbsp olive oil, divided
  • 1 tsp turmeric , powder
  • fresh ground pepper
  • 3 strawberries, hulled and sliced
  • 1/2 avocado, sliced
  • 1 egg, hardboiled
  • 1 tbsp sesame seeds, optional

For the Dressing

  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp raw honey
  • 2 tbsp lemon juice, 1/2 lemon, fresh squeezed
  • fresh ground black pepper

Instructions 

For the Dressing

  • Combine all of the dressing ingredients in a small glass and stir vigorously using a fork or a small whisk.

For the Salad

  • Heat the olive oil in a small saute pan over low heat. Add one tablespoon of olive oil, some fresh ground pepper, and the turmeric. Gently stir the mixture until the turmeric is dissolved. Add the sliced chicken. Stir the chicken around until it is well coated, and remove the pan from heat. Sprinkle with optional sesame seeds.
  • Combine the remaining salad ingredients in a large salad bowl, starting with the spinach and mixed greens. Add the tumeric-coated chicken slices. Pour the dressing over the salad mixture, and enjoy!

Notes

  • Adjust the amounts of dressing ingredients to your taste.
  • To get the most nutrition out of your turmeric, heat it in olive oil and fresh ground black pepper.
