What if I were to tell you that for around $10.00 you can make dinner for a family of 4 with minimal prep and maximum flavor? For those of you that have read my past posts, you know that I am currently in a love affair with my crock pot. Partly because of the ease of prep but mainly because dinner is ready when I walk through the door.

So while I was at the store the other day, I noticed that whole chicken legs and thighs were on sale. I was able to pick up 5 pounds of chicken for a little over $4.00. How could I pass that deal up? I knew that I could use 3 pounds of it for one meal and still have enough left to use for another meal.

As I stood in the store it was a no brainer that I was going to buy the chicken, but I wasn’t sure what to do with it. Although I love chicken, sometimes it can get boring and repetitive. Then a flashback hit me. When I was growing up, my mom would make a wonderful chicken cacciatore, or as I called it as a kid kitchen cacciatore. With a little thought and a few additional ingredients from the pantry, I was able to put together this Slow Cooker Chicken Cacciatore Recipe. Prep time was low, only having to chop up an onion and green pepper, everything else gets dumped into a bowl, mixed together and dumped on top of the chicken. It really couldn’t be any easier. So, if you have 5 minutes in the morning, you can have a wonderful meal in the evening. Go ahead and start a love affair with your crock pot and give this recipe a try. Enjoy! -Scott

Slow Cooker Chicken Cacciatore Recipe

Ingredients
- 3 lbs cut up skinless chicken, would recommend chicken with bone for more flavor
- 1 large onion cut thinly
- 1 green pepper diced
- 8 oz sliced mushrooms
- 4 Tbs minced garlic
- 2 6 oz cans tomato paste
- 1/2 cup white wine
- 3 Tbs olive oil
- 2 tsp oregano
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp celery salt
- 1 tsp crush red pepper flakes
Instructions
- On the bottom of the crock pot place onions
- Put cut up chicken on top of onions
- In a mixing bowl put all remaining ingredients, blend until incorporated and put on top of the chicken
- Cook on high for at least 4 hours or on low for about 7-8 hours
- Serve with rice or with a pasta and vegetable of choice
